Maccheroni Durum, Barley & Rye

Serve a pasta dish that controls both consistency, color and taste. The malted and nutty flavors from Durum, rye and barley come together in this colorful Maccheroni from Nicolas Vahé. To get the sauce to hang as much as possible, the paste is made in a bronze mold which makes the surface a little rough and porous. So you get more sauce and more flavor in every mouthful. Then you can hardly ask for more. Serve the maccheronia as an updated version of a Mac & Cheese, enjoy it with a very simple tomato sauce or as a delicious, cold pasta salad.
